Blue Osa’s Pineapple Jam
?>-7 cups of pineapple cut into chunks
-3 1/2 cups of granulated white sugar
-1 Tablespoon vanilla
-1 Pinch of cinnamon
-zest of one lemon
Preparation
1. Clean and chop pineapple into medium pieces
2. Mix in a large bowl with the sugar, vanilla, and cinnamon and marinate 2 hours at room temperature
3. Transfer mix into a heavy-bottomed stock pot, let simmer for 1 1/2 to 2 hours over very low heat
4. While the pineapple cooks prepare your jars by placing in boiling water for 2 minutes and allow to and dry upside down on clean towels
5. When your jam is cooked put in hot jars. Close your jars and flip jars upside down to help create a tight seal
* consume 3 or 4 days after
** keep opened jars in a refrigerator and unopened in a cool dark space
