Ayurvedic Recipe to Maintain Balance During the Vata Season: Sweet Potato Biscuits
Who doesn't love biscuits? Try this vata-balancing recipe with sweet potatoes and help keep your vata in balance during this season when vata easily goes out of balance!
Sweet Potato Biscuits
VP-K+ (Balancing for vata and pitta, aggravating to kapha)
2 cup barley or whole wheat flour
1 teaspoon salt
1 tablespoon baking powder
1/4 teaspoon baking soda
Cut into the flour mixture until it is the consistency of coarse oatmeal:
1/4 cup butter or ghee
Peel and mash:
1 medium sweet potato, cooked (such as boiled)
Spoon it into a measuring cup. You should have a little less than 3/4 cup total mashed potato.
Add to it:
Juice of 1 lemon or lime
About 1/4 cup soy or freshly boiled raw cows milk (or enough milk to bring the volume up to 1 cup total). Stir together with a spoon or fork.
Mix the wet ingredients into the dry ones with your very clean hands, working quickly and lightly. Add extra flour if you need it. Cover the dough and chill it for about 15 minutes. Preheat oven to 450 degrees F.
Butter 2 cookie sheets. Roll the dough out on one until it is about 1/2 inch thick. Cut into rounds, pumpkins, whatever you like, directly on the cookie sheet. (This minimizes the use of extra flour in the rolling process, which can make a biscuit tough. It is also easy for clean up). Use the remaining dough for biscuit as well, lightly kneading it into a ball, then rolling it out again on the other buttered cookie sheet. Bake for about 12 minutes, or until lightly browned.
